1-2 years from now, when graphics card prices hopefully have dropped, maybe I'll consider getting one of these processors. -For example to play Witcher 4 or Fallout 5. But for now I'll stick with my I5-7500.

But for now I'll stick with my I5-7500. Hopefully we will see the end of the current global chip shortage in 2022. But be happy. At least you have a 7th gen cpu. Mine is a 3rd gen i3.

The price will drop because Intel wants to release its own GPUs (graphics card) too. Also, the previous gens of cpu and gpu are good too. So you can buy/build a good and cheap PC. If your PC passes Windows 11 compatibility criteria, then it's OK.
