God, the Lord, is the Creator of souls (Genesis). The devil, perhaps, is an enticer and a cheater who wants to steal souls and keep 'em in his lair (The Book of Job). So, what will happen when number of souls becomes larger (of one's side)?

Satan will get more souls it's already predicted since not many choose God and give their soul to the devil. They will then spend enternity in hell with satan but this side doesn't win in the least. An eternity of pain is not a victory. It's a defeat. Few win a race or a competition anyway it's how it is meant to be.

(DISCLAIMER- My reconstruction of Catharism is a work-in-progress and, as such, is subject to revision as new information comes my way or I work out certain issues to fill in the historical blanks.)
I am a modern-day Cathar, trying to piece together and follow that Gnostically-influenced Christian sect that was put down by the Church with a lot of blood and fire. As such, I believe the Father- God- is the ultimate creator of souls (or spirits = angels), but that he has also given that power to his Archangels (or Aeons, in Gnostic-speak).
Bypassing an awful lot of cosmology/theology, there are a finite number of souls/spirits trapped in the Material World by the Demiurge (whom I identify as Satan), and from whom Satan derives his power. As it happens, though, he was tricked into placing a soul in Man in order to make him 'work'.
Even more cutting to the chase, when we awake to our spiritual nature and get our soul/spirit clean and purified, we have a better chance of overcoming the Archons (Satan's servants) and returning to the Divine Realm of God. If we fail in that, the soul is stripped of all its humanity and returned to the Well of Souls for another go in another body.
Once enough spirits have escaped the Material World, Satan's power (derived from those souls, remember) will weaken and his grasp on the Material World will break. The Material World will cease to exist, and the remaining souls/spirits will be taken to the Divine Realm to be Judged. Those found in favor will be admitted to God's Presence, those found lacking- or that have been completely corrupted- will be destroyed, and Satan will be stripped of all powers, as an example to the Archangels of the consequences of the misuse of their power.
In short, the longer Satan keeps us blind to our spiritual nature and dependent upon on our weakness for the Material, the longer he stays in charge. The sooner we get off this rock and back to God, the sooner Satan gets his just desserts. But since we don't know exactly when the balance of power will shift away from Satan, it is that much more important to get out of here during THIS lifetime, rather than just dogging it and hoping for the best.
