I believe we humans are just as much animals as mice, pigs and apes - all need to eat, drink, stay out of bad weather, excrete, etc.. But in terms of mental capacities we are special, I agree. But all living things are special in their own different ways - and all equally as needed.

Plants need to eat (photosynthesis, etc), drink (water), stay out of bad weather not to die, etc.

Plants need to eat (photosynthesis, etc), drink (water), stay out of bad weather not to die, etc. Hmm, well plants are quite different. They require photosynthesis for energy (like you said), whilst we ingest our food. It's all about how deeply you classify things, I guess. We humans are just too similar to apes and other animals to be separate from animals, at this stage.
